I know that there are a LOT of recipes out there for buffalo chicken meatballs…really…buffalo chicken anything! I put this recipe together after taking a look at several different varieties on this dish and was really pleased with how these turned out! We brought them to our monthly Euchre card game and they were a big hit!
Buffalo Chicken Meatballs

Ingredients
- 2 lbs. ground chicken
- 1 cup plain breadcrumbs
- 2 eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt & pepper
- 2 celery stalks, minced
- 1 packet Hidden Valley Ranch Seasoning
- 2 cups buffalo sauce
- 1 stick salted butter
- Ranch dressing
Instructions
- Preheat oven to 400 degrees F.
- Combine all of the items through the Hidden Valley Ranch Seasoning to a large bowl.
- Mix well.
- Roll into approximately 1 inch meatballs and place on a parchment lined baking sheet.
- Cook for 20 minutes, rotating after 10 minutes.
- Add the butter and buffalo sauce to a saucepan over medium high heat.
- Let the butter melt and combine into the buffalo sauce.
- After the 20 minutes, add the meatballs to a crockpot.
- Add sauce and gently stir to coat meatballs.
- Keep on low and serve with toothpicks and a bowl of ranch dressing.
