Burrata Salad

OK – so, maybe this isn’t so much a salad with a lot of greens, but I am a huge fan of burrata and this dish is fantastic! 

Wondering about burrata?  It’s a cheese – but what makes it unique (and delish) is that it’s like ricotta cheese INSIDE of a shell of mozzarella cheese that is formed into a ball.  How awesome is that? 

What’s even more fun is the pronunciation.  “Boo-rata” is the correct way and do you know what makes it even better?  You get to ROLL the Rs in it!

Burrata Salad

Ingredients
  1. 1/2 peach, sliced
  2. Handful of arugula
  3. 2 ounces of Burrata, cut into small pieces
  4. 1-2 slices of proscuitto, cut into small pieces
  5. Pepper, to taste
  6. Extra virgin olive oil
  7. Balsamic glaze
Instructions
  1. Arrange all of the ingredients on a salad plate. Season with pepper. Drizzle with extra virgin olive oil and balsamic glaze. Serve immediately.
