Quinoa and Fruit Breakfast Bowl

This is a super easy, quick breakfast that is full of healthy stuff and delicious flavor!  You’ll want to have some quinoa already made and in your refrigerator before making this.  I typically make 1 cup of dry quinoa which ends up being about 3 cups cooked and can then use it throughout the week. 

I encourage your creativity while making this! Some ideas?  Use skim milk instead of almond milk, use sunflower butter instead of peanut butter.  Top with granola instead of nuts.  Swap out berries for bananas and peaches.  The possibilities are endless – enjoy!  

Please note that I would LOVE to give credit where credit is due, but in this case I am unable to.  It was several months ago when  I saw something similar on Instagram and it popped in my mind very recently to make a version of it.

Ingredients
  1. 1 cup plain, cooked quinoa
  2. 1/3 cup vanilla almond milk
  3. 1 tablespoon crunchy peanut butter
  4. 1 cup fresh berries
  5. 1/4 cup chopped walnuts
Instructions
  1. In a bowl, add the quinoa, vanilla almond milk, and peanut butter, stir to combine. Top with fresh berries and chopped walnuts.
  2. Serve immediately.
